No Egg Fruitcake

INGREDIENTS:

750ml mixed fruit

600 ml chocolate milk (I use Breaka’s)

2-1/4 cups SR Flour

½ cup granulated nuts (optional)

3 tab rum or brandy (optional)

Almonds & Cherries for decoration (optional)

COOKING INSTRUCTIONS:

  • Soak fruit & chocolate milk overnight

  • Next day mix in the flour, nuts, rum/brandy

  • Bake moderate oven 350? for 1 to 1-1/2 hrs

  • When cool decorate with almonds & cherries

When I cook any type of fruit take I store it in the freezer. I find it not only cuts beautifully, it also makes it really moist.
